Tortilla soup is one of those Mexican dishes you crave on any day. Luckily, it can be found on restaurant menus across Mexico and the United States, and it is also very easy to make at home!
This delicious authentic homemade tortilla soup recipe is a favorite of Eldorado Hotel & Spa Executive Chef Anthony Smith.
Easy Old House Tortilla Soup Receipe
Makes ½ gallon, serves 8 people.
Ingredients:
3 pints Chicken stock
½ Yellow onion
1 pint Tomato juice
2 oz Lime juice
1 tsp Oregano
3 Cloves garlic minced
2 tsp New Mexico red chile powder
6 Corn tortillas
½ Bunch cilantro
Preparation:
Put all ingredients above in pot. Bring to a boil and simmer for 30 minutes.
Blend smooth until smooth. Add salt and pepper to taste.
Add following to soup:
8 oz Grilled diced chicken
1 cob Fresh corn kernels
Serve with sour cream & queso fresco.
