How great is Easter? I mean, what’s not to like? It’s a holiday, you eat loads of chocolate and it’s the only time in the year where it’s socially acceptable to crack open the egg puns.
There are so many amazing Easter travel destinations which you should definitely check out, but let’s be honest, eggs are the real heroes of Easter, not just because of their religious symbolism, but because they make some of the best meals.
I felt it was only appropriate that we bring you an egg-stra special blog this Easter, with 10 delicious meals that you can make with eggs, that won’t blow your travel budget.
Try out these egg-cellent traveller friendly meals.
1. Easy Peasy Pancakes
Naturally, we start with breakfast. If you’re bored of the same old bread and jam hostel brekkie, then head into the kitchen and rustle up some easy pancakes.
Whisk up 100g of plain flour, 300mls of milk, 2 large eggs and a pinch of salt. Heat a little oil in a frying pan over a medium heat and start cooking your pancakes!
Serve with maple syrup, lemon, or Nutella. Just be careful with the flipping!
2. Breakfast Burrito
A Tex-Mex classic; this hearty breakfast wrap will keep you full for hours. Fry up some red peppers and onions in a pan and set aside. Then scramble 2 eggs with 2 tablespoons of milk and a little butter. Spread some salsa and hot sauce on a tortilla wrap and layer the eggs and peppers on top. You can then add cheese, avocado, beans or chorizo depending on your taste. Wrap it up nice and tight and tuck in!
3. Huevos Rancheros
This Mexican brunch recipe is great way to make your breakfast a little more eggs-otic! Make for breakfast, lunch or dinner – it’s so simple but so tasty.
All you need is 2 eggs, 1 tortilla wrap, half a can of chopped tomatoes, 1 red pepper, 1 red onion, garlic, 1 red chilli, cumin and chilli powder.
Make the chilli tomato salsa by frying the onion and garlic and red pepper until soft, then adding the chopped tomatoes with the chilli and spices. Once cooked, move the tomatoes to the side and fry your eggs. Quickly heat up your wrap and spoon on the eggs and chilli!
4. Tuna Niçoise Salad
Sometimes all you want to eat in a hot country is a healthy salad. One of the easiest salads to rustle up yourself is the Tuna Niçoise. Boil some new potatoes in a pan and hard boil an egg. Wash some salad leaves in bottled water, toss in some cherry tomatoes, green beans, black olives and capers. Drain a can of tuna toss into the salad with the chopped up potatoes and egg. Drizzle over some vinaigrette and voila! A classic French salad made easy.
5. Poached Eggs And Spinach
A super healthy and easy breakfast, lunch or dinner; poached eggs and spinach.
For this meal you only need 4 key ingredients: eggs, spinach, bread and a little vinegar. Getting perfect poached eggs can be a stressful egg-sperience at the best of times, but the most fool-proof way to do this (with minimal kitchen utensils!) is to drop a little bit of vinegar into the gently boiling water, then carefully lower the eggs into the water with a ladle.
For a runny yolk, take out after 2 to 3 minutes. Pour some boiling water over the spinach to wilt it, and serve up on some brown toast.
6. Indonesian-Style Noodles
Stir-fries are a staple for the budget backpacker, especially when they are meat-free. These Indonesian-style noodles are easy to make with the simple ingredients of egg noodles, spring onions, carrots, yellow or red peppers, garlic, sweet soy sauce, limes, some crushed peanuts and a boiled egg.
The sweet soy sauce is key and should be easy enough to find if you’re in Asia. Boil the noodles until they are al dente and hard boil the egg. Heat some oil in a pan and fry up the thinly sliced carrots, peppers, garlic and onions. Add the soy sauce and lime juice along with the noodles and serve piping hot!
7. Tortilla Espanol
Omelettes are an easy meal but, dare I say it, they are a little boring. For an omelette with a difference, try this carb-heavy Spanish version: tortilla Espanola.
This recipe will make enough for two hungry travellers to eat for lunch or with something else for dinner. Fry up some thickly sliced new potatoes and onions in about 150ml of oil. Season them with a generous helping of salt and pepper and cook on a low heat for about 20 minutes until they’re soft.
Break 5 eggs into a bowl and whisk gently with a fork. Add the fried potatoes into the bowl with the eggs and mix thoroughly before adding back into the freshly oiled pan. Leave to cook on a low heat for around 20 minutes, running a palette knife around the edges every now and then.
To cook the top a little quicker, place the pan under a grill for a few minutes. Leave to cool for 5 minutes and then serve!
8. Baked Avocadoes With Eggs
If, like us, you’re a big avocado fan, you’ll love this recipe! Preheat an oven to 250 degrees. Cut an avocado in half and remove the stone. Scoop out enough avocado to be able to crack the 2 eggs into the hole. Sprinkle the egg with salt and pepper and bake sunny side up for 15-20 minutes. Serve with a tomato salsa or some fresh coriander for a great healthy lunch!
9. Egg Fried Rice
Egg fried rice is a great traveller dish, mainly because you can throw anything in to the mix! Boil some rice in a pan until cooked, drain and set aside to cool (it works best when the rice is cold). Cook some frozen peas or small florets of broccoli if available.
Meanwhile, crack an egg into a bowl and whisk in a teaspoon of soy sauce. Heat some vegetable oil in a pan and stir in the rice until heated through. Add the peas, some chopped spring onions and beansprouts. Add another teaspoon of soy sauce to the rice and push to the side of the pan.
On the other side, pour in the beaten egg mixture until it begins to set. Then break up the egg by stirring the rice in for another minute. For meat lovers, add in some chicken or prawns!
10. Spaghetti Carbonara
The Italian classic pasta dish. This tasty pasta dish is easy to make with five key ingredients: spaghetti, bacon, onion, cream, egg. Cook the pasta for 8-10 minutes, whilst frying the chopped up bits of bacon in a dry pan until crisp. Next, whisk 2 egg yolks in a bowl with some double cream. Season with black pepper. Drain the cooked pasta and return to the pan along with the bacon and the cream sauce. Stir the pasta so that it gets a good coating of cream, for about 3 minutes and serve. Grate some cheese on top for a truly decadent treat – mmm… bellissimo.
